Heaven on Toast

 Whipped Ricotta on Sourdough  Yield: Small batch (~4 pieces) The Basics (Ingredients) A couple of heaping tablespoons of Ricotta Olive oil Herbs of your choice - I used dill Salt & Pepper Bread (toasted) Instructions Add ricotta and salt (to taste, I didn't add a lot) to blender. Blend for about 30 seconds. Then, as the blender is still going, pour in olive oil slowly until mixture is smooth and fluffy. I tried to add oil sparingly as more goes on top. Toast bread. Add whipped ricotta to bread. Sprinkle with herbs of choice and olive oil. Crack fresh pepper and sea salt.  The "Spin" In discussions with coworkers, the need for simple, cheap recipes that anyone can replicate is apparently in demand (I see you truffle lovers; apparently we may be a bit too extra!!).
