Turkish-ish Pide

Crust:

  • 3 1/2 cup whole wheat flour
  • 2 tsp sugar
  • 2 1/2 tsp yeast
  • 1 1/3 cup ice water
  • 1 Tbsp olive oil
  • 1 1/2 tsp salt
Toppings:
  • 2 small or 1 large zucchini, grated
  • 1/2 onion, finely chopped
  • 1 Tbsp minced garlic
  • 1 pound ground pork 
  • 1 Tbsp olive oil
  • 2 cans tomato paste
  • water 
  • Cheese, shredded
  • To taste (I use quite a bit, like 1-2 Tbsp): red pepper chilis, paprika, onion powder, garlic powder, spicy pepper medley, black pepper, thyme, oregano

Crust:

  1. Mix flour, yeast, and sugar in a bowl. 
  2. Add ice water until the dough is just combined and no dry flour remains. Let rest for 10 minutes.
  3. Add salt and oil. Mix until dough forms a ball. 
  4. Pour dough out onto a lightly oiled countertop, knead about 30 seconds, and roll into a ball. 
  5. Put in a bowl and cover with plastic wrap. Put in fridge and let rise for about 24 hours (I only did 5-6 hrs so . . . ). 
Topping:
  1. Add onions and oil to a pan. Let cook for a couple of minutes until starting to brown. 
  2. Add zucchini and minced garlic and stir—cook for a couple of minutes with the onion. Add spices (as you so choose) and let cook until fragrant. 
  3. Put aside in a bowl. 
  4. Cook ground pork. Season with pepper, salt, onion powder, and whatever else you want. 
  5. Add the tomato paste with 1-1 1/2 cans of water. Mix until a sauce is formed.
  6. Add the vegetables that were sitting in a bowl.
Assembly:
  1. Preheat oven to 500F. 
  2. Take out dough. Punch down and roll out of the bowl onto a floured surface. Cut into 6 equal parts. 
  3. Working with one piece at a time (keep the rest under the plastic wrap until ready to use).
  4. Roll piece of dough in flour. Continue with the 5 other pieces and let rise for 1 hour (I did not do that as I was hungry).
  5. Working one at a time, roll out the ball into a roughly 14 inches by 5 inches oval. Transfer to a pan covered in parchment. 
  6. Put 1/6th of the topping on the dough and spread. Sprinkle cheese on top. 
  7. Fold sides in towards the centre (but not so far that they touch). Pinch ends together so it looks like a boat. 
  8. Repeat for the other 5 pieces. 
  9. Put in oven and bake for 10-15 minutes (mine took 12 minutes). 
  10. EAT.

Guess what! There is even a picture in this one (note that it even comes at the end so you don't have unnecessary scrolling)!! The blog is really evolving (sarcasm). Basically, I made these for a friend and my sister and I was proud so I took a picture. Also, get used to it, but I don't always follow instructions so, while it probably could have been better, I was happy with it as it is! Mostly because I am not actually a patient person so . . .
