Turkish-ish Pide
Crust:
- 3 1/2 cup whole wheat flour
- 2 tsp sugar
- 2 1/2 tsp yeast
- 1 1/3 cup ice water
- 1 Tbsp olive oil
- 1 1/2 tsp salt
- 2 small or 1 large zucchini, grated
- 1/2 onion, finely chopped
- 1 Tbsp minced garlic
- 1 pound ground pork
- 1 Tbsp olive oil
- 2 cans tomato paste
- water
- Cheese, shredded
- To taste (I use quite a bit, like 1-2 Tbsp): red pepper chilis, paprika, onion powder, garlic powder, spicy pepper medley, black pepper, thyme, oregano

Crust:
- Mix flour, yeast, and sugar in a bowl.
- Add ice water until the dough is just combined and no dry flour remains. Let rest for 10 minutes.
- Add salt and oil. Mix until dough forms a ball.
- Pour dough out onto a lightly oiled countertop, knead about 30 seconds, and roll into a ball.
- Put in a bowl and cover with plastic wrap. Put in fridge and let rise for about 24 hours (I only did 5-6 hrs so . . . ).
Topping:
- Add onions and oil to a pan. Let cook for a couple of minutes until starting to brown.
- Add zucchini and minced garlic and stir—cook for a couple of minutes with the onion. Add spices (as you so choose) and let cook until fragrant.
- Put aside in a bowl.
- Cook ground pork. Season with pepper, salt, onion powder, and whatever else you want.
- Add the tomato paste with 1-1 1/2 cans of water. Mix until a sauce is formed.
- Add the vegetables that were sitting in a bowl.
Assembly:
- Preheat oven to 500F.
- Take out dough. Punch down and roll out of the bowl onto a floured surface. Cut into 6 equal parts.
- Working with one piece at a time (keep the rest under the plastic wrap until ready to use).
- Roll piece of dough in flour. Continue with the 5 other pieces and let rise for 1 hour (I did not do that as I was hungry).
- Working one at a time, roll out the ball into a roughly 14 inches by 5 inches oval. Transfer to a pan covered in parchment.
- Put 1/6th of the topping on the dough and spread. Sprinkle cheese on top.
- Fold sides in towards the centre (but not so far that they touch). Pinch ends together so it looks like a boat.
- Repeat for the other 5 pieces.
- Put in oven and bake for 10-15 minutes (mine took 12 minutes).
- EAT.

Guess what! There is even a picture in this one (note that it even comes at the end so you don't have unnecessary scrolling)!! The blog is really evolving (sarcasm). Basically, I made these for a friend and my sister and I was proud so I took a picture. Also, get used to it, but I don't always follow instructions so, while it probably could have been better, I was happy with it as it is! Mostly because I am not actually a patient person so . . .
