Heaven on Toast
Whipped Ricotta on Sourdough
Yield: Small batch (~4 pieces)
The Basics (Ingredients)
- A couple of heaping tablespoons of Ricotta
- Olive oil
- Herbs of your choice - I used dill
- Salt & Pepper
- Bread (toasted)
Instructions
Add ricotta and salt (to taste, I didn't add a lot) to blender. Blend for about 30 seconds. Then, as the blender is still going, pour in olive oil slowly until mixture is smooth and fluffy. I tried to add oil sparingly as more goes on top. Toast bread. Add whipped ricotta to bread. Sprinkle with herbs of choice and olive oil. Crack fresh pepper and sea salt.
The "Spin"
In discussions with coworkers, the need for simple, cheap recipes that anyone can replicate is apparently in demand (I see you truffle lovers; apparently we may be a bit too extra!!). But, now that you have the basic instructions, here's my "elevated" and "too extra" spin.
The basic whipped ricotta is the same. However, I used homemade sourdough bread as my base. I had also just been to the local EVOO and Vinegar shop with my fellow ranters, so I had some yummy Dill infused EVOO (which was sprinkled on top). As well, I had some fresh dill in the fridge--side note, is dill supposed to be kept in the fridge or . . . ??? To top it off, I added cracked pepper (as instructed) but some truffle salt as well. Honestly, the possibilities are endless! I'm also just sitting here so excited as there are sooooo many other combos that I am going to have to try with it!! I think the EVOO shop needs to sponsor me . . .
The Story Behind "Heaven on Toast"
While I love my job (for the most part), I live in the middle of nowhere. Although I feel that I am a woman of simple tastes and pleasures, not everyone in my quaint little town agrees with that statement (or at least my co-worker). Give me anything truffle flavoured and I'm happy. It can literally just be popcorn and truffle salt (go try if you haven't) and I am happy.
With this in mind, when I re-enter civilization, I feel like I want to eat "Everything Everywhere All at Once" and hope the food is also oscar worthy. On my recent trip to the big city, we stopped at a restaurant that had been on our list FOREVER. Uccelino's, it's Uccelino's. All of the food we ordered was absolutely amazing. Like SO GOOD! As an entreé, I had the truffle stuffed gnudi. So good.
However, the highlight would be the house-made goat ricotta on toast. When I say it was silky smooth, like imagine the smoothest thing you have ever eaten and multiply that feeling by 10. It was joy on a piece of toast. Naturally, as you do when you eat good food, I needed to try recreating it at home, resulting in this post. While I would love to try again with goat ricotta, I am pretty happy with my version, and, while I don't want to say I made it better, I might have . . .
Again, I love my job, but it's food like this that makes me question my life choices! Also, if you read this far, I feel like I should have confessed to murder or something to make it worth your while!! (I promise no crimes were committed in the making of this post).
