Zucchini Chips
- Zucchinis (as many or as few as you want--but I guess you need at least one)
- 2 Tbsp Olive Oil (can include flavoured olive oils, but 2 Tbsp total)
- Seasonings - I like Spicy Pepper Medley, Cayenne, Garlic Powder, Onion Powder, Oregano, or Dill

- Preheat oven to 225F. Put parchment paper on a baking sheet.
- Slice zucchini as thin as possible. I use a mandolin so that they are relatively even, too!
- Lay out zucchini so that all the pieces are flat and not overlapping. Press between paper towel to absorb any extra moisture. The edges of the zucchini can touch as they will shrink in the oven but overlap will result in chips that are stuck together.
- Lightly brush zucchini with olive oil or olive oil mixture (if you throw in some flavoured oils--I usually add a bit of cayenne olive oil as cayenne powder becomes almost concentrated if sprinkled on top. This way it's kind of even and not overpowering).
- Sprinkle seasonings on top to suit your taste. Don't add too much though as the chips shrink in the oven and the spices get stronger!
- Bake in the oven for 1.5-2 hrs or until brown and don't stick to the parchment paper.
- Voila! Can be served with tzatziki sauce.
